The best plans are like the nature: it's a continuous line from a smaller value to a larger value without jumps and discontinuities.

The Omnivore plan is modelled like so:
a monthly minimum charge
a monthly maximum charge
a sales percentage
a free trial period in days
For Shopify only there's also a max cap amount, but for the purpose of this is ignored.
The free trial period is self explained and it doesn't greatly contribute to the monthly calculation.
By appropriately setting the first 3 parameters, one can create the following types of plans:
1. Monthly flat fee: set min charge equal to max charge. the sales percentage is ignored.Example plans: flat100, free
2. Monthly variable fee as a percentage of sales: set min charge to zero, set sales percentage to 1% (or whatever), set max charge to a very large value. Example plans: Enterprise 2020, Sales 2020 or Tiered 2017
3. Like above, but cap the monthly spend: set max charge to whatever the capped amount should be.
4. Minimum monthly fee then a percent of sales up to a maximum amount: set min charge, max charge and sales percentage, eg: selfserve74.95ShopifyOnePercent
This can also be expressed as: a minimum charge of x up to monthly sales of y, then 1% of sales if we calculate so that x = 1% of y.
5. Like above, but no limit: just set max charge to a very large value, eg 1 million.
If the plan is modelled like the above, the calculation and textual description are derived strictly from the parameters of the plan, leaving no room for errors.
